If a spacecraft accelerated at 'g' to simulate the gravity of earth
whilst travelling. What happens if it's speed nears that of light does
it continue to accelerate and therefore create an 'artificial
gravity', or does it cease to accelerate?

Depends on your point of view. If you are on the ship, you continue to
accelerate and you continue to experience the "artificial gravity". If you are
watching the ships as it passes, from a point that seems roughly motionless to
us here back on Earth, is not accelerating as much. But it is shorter...
