Does anyone know who came up with the original
formulation of string theory? I would be interest
in knowing this.

If you Google the early days you will note that there were some seven
different distinct string theories, plus flotsam and jetsam.
"Original" is situational. M-theory subsumed the lot, added a bunch
of fluff of its own, and called it good. While being mathematically
elegant and all inclusive (like a well-managed landfill), M-theory
neatly avoids the possiblity of any empirical falsification. Until it
is subject to experimental challenge, it is not science.

I believe it may have been Kaluza and Klein, but I'm not sure.

I DO know that it was developed to try to explain nucleons, but that
was before Quantum Chromodynamics, which soon replaced it.

You should check Jeffery Winkler's site. It should say something about
it there, in The Standard Model or Beyond The Standard Model.
